Questing after bran muffins

Greg calls them paleocarbs, because they look like they’ve got hunks and husks of vegetative matter in them. Doesn’t sound very yummy, but I find that these are the carbs I crave — dense, toothy and as full of fiber as they are of flavor. I drop blops of batter into my mini cupcake maker and end up with something that really hits the spot mid-morning. I’m trying to make my way to a Lenten version of this, but for now, I’ll pass it along the way I got it from the Lite Cooking cookbook. (BTW, if anyone has a recipe for bran muffins they like, hit me! I’d love to see what else is out there.)BANANA-BRAN MUFFINS
1/2 cup low-fat sour cream
1/2 cup mashed ripe banana
1/2 cup fat-free milk
1/3 cup sugar
2 T vegetable oil
1 teaspoon vanilla extract
1 large egg, lightly beaten
1 1/2 cups morsels of bran cereal (– such as Bran Buds, but All Bran can also work)
3/4 cup all-purpose flour
1/2 cup oat bran
1 teaspoon baking powder
1 teaspoon baking soda
Cooking spray- Combine sour cream, banana, an next five ingredients in a bowl; stir well with a whisk. Add cereal; stir well. Let stand for 10 minutes.
- Preheat oven to 400 degrees.
- Lightly spoon flour into a dry measuring cup. Combine flour, oat bran, baking powder and baking soda in a large bowl, and make a well in center of flour mixture. Add cereal mixture to flour mixture, stirring just until moist.
- Spoon batter into 12 muffin cups coated with cooking spray. Bake for 16 minutes or until muffins spring back when touched lightly in center. Remove from pans immediately; place on a wire rack. Yield: 1 dozen (serving size: 1 muffin)
